KeymasterGreat question! “Dry” simply means the wine has very little residual sugar — most of the grape sugar was converted to alcohol during fermentation. A wine can absolutely be dry AND fruity. Fruit flavours come from the grape variety and aromas, not from sugar. Your Sauvignon Blanc was likely bone dry but had tropical fruit aromas. Think of it like smelling a mango versus eating candy — same fruit character, but no sweetness.

KeymasterBarolo definitely benefits from decanting! Simply opening the bottle does very little — the neck is too narrow for much air contact. Pour it into a decanter 1-2 hours before serving. For a young Barolo (under 10 years), you could even go 2-3 hours. The tannins will soften and the aromas will really open up. For older bottles (15+ years), be gentler — 30 minutes max, as they can fade quickly.

KeymasterI second the decanter advice. Also, if you do not have a decanter, you can double-decant: pour the wine into a clean pitcher, rinse the bottle, then pour it back. Works surprisingly well!

KeymasterAgree with your score. Cloudy Bay was groundbreaking 20 years ago but the category has caught up. Try Villa Maria Private Bin or Oyster Bay for similar quality at a better price point in HK.

KeymasterRiesling is the classic pairing — the slight sweetness and acidity cuts through the richness of siu mai and char siu. Look for a German Kabinett or Spätlese. Dr. Loosen Blue Slate Riesling is usually around HK$150 and works beautifully. If you prefer bubbles, Crémant d Alsace is a great Champagne alternative at half the price.

KeymasterFor a 10th anniversary, you need something with a story. Look for a Burgundy — a village-level Gevrey-Chambertin or Volnay from a good producer. Domaine Faiveley or Joseph Drouhin make beautiful bottles in that range. If you want something from the new world, look for Felton Road Pinot Noir from Central Otago — absolutely stunning and around HK$450.
